Indispensible in Asian cuisine. More fragrant than aniseed. Ideal for seasoning pork, duck, beef and many desserts.
Containing many of the same volatile oils as aniseed, the licorice flavor of star anise is more pronounced verging on intense. As such, star anise must be used sparingly. One or two stars is often enough for most recipes.
In Chinese and Vietnamese cookery, star anise is used to flavor broths and braised meats. Star anise is a key component of the Chinese Five Spices blend. An exquisite accompaniment for beef, pork and duck. Mix with fennel and mandarin peel for a perfect seasoning for ribs or pork roast. Use whole in long simmered dishes or grind for quick recipes.
