Lemon coconut energy bites recipe

Ingredients:

- 1 cup raw cashew nuts

- ¾ to 1 cup Medjool dates

- 1 cup unsweetened shredded coconut

- 2 measures Botanica vanilla Perfect Protein

- Juice and zest of a lemon

- A pinch of sea salt

Preparation:

  1. Blend cashews and dates in a food processor until texture is coarse.
  2. Add the rest of the ingredients and mix until a crumbly, dough-like texture is obtained.
  3. Shape dough into small balls and refrigerate 30 minutes before serving.
