Although many believe they are part of the nut family, cashews are an oleaginous fruit from the cashew tree. Naturellementbio cashews are certified organic by Ecocert Canada and are also Forest Garden certified, attesting that they are farmed in a sustainable manner, thus contributing to conserving the biodiversity of Sri Lanka, where they are grown. Also, they are shelled by hand rather than boiled, thereby allowing the cashews to retain their full nutritional profile.

Healthy properties

Cashews are a good source of vitamins (B1, B2, E and K) and minerals (copper, magnesium, iron, manganese, phosphorus and zinc)1. They also contain a significant amount of protein (providing satiety)2, fiber (beneficial for gut health)2 and antioxidants (protecting the cells from damage caused by free radicals)1. Another interesting fact: 60% of the fat contained in cashews is in the form of monounsaturated fatty acids, that is, “good fats” with beneficial effects on cardiovascular health1. In the kitchen, cashews can be eaten plainly as a snack, they can be reduced to make vegan beverages, sauces and cheeses and they can be incorporated to savory (salads, stir-fries, rice, etc.) and sweet (cookies, brownies, cakes, etc.) dishes.

Spinach salad with fruits and nuts recipe

INGREDIENTS

Salad:

- 4 cups baby spinach

- ½ cup microgreens of your choice (peas, sunflower, broccoli, clover, etc.)

- ½ cup fresh blueberries

- ¼ cup raw cashews

- 2 tbsp. dried cranberries

- 2 tbsp. raw almonds

- Salt and pepper, to taste

Vinaigrette:

- 1 cup vegan sour cream

- ½ cup olive oil

- ⅓ cup white wine vinegar

- ¼ cup beet juice

- 1 tbsp. cane sugar

- 1 tsp. salt

- Pepper, to taste

PREPARATION

Salad:

In a large bowl, combine all the ingredients.

Vinaigrette:

1. In a small bowl, combine all the ingredients and whisk until a smooth texture is obtained.

2. Pour the vinaigrette into the salad bowl and mix.
