Corn and Avocado creamy salsa


  • 3 corn seeded , fresh
  • 1 large ripe avocado ( or 2 small ), diced
  • 1/2 cup of red onion, finely chopped
  • A handful of chopped fresh mint
  • 1/2 cup of plain Greek yogurt
  • The juice of half a lime
  • 1 tbsp. of olive oil  ( for cooking)
  • Sea ​​salt and black pepper, coarsely ground


1. Saute the corn kernels and the olive oil in a hot pan for 5 to 8 minutes. Add salt and pepper to taste. Refrigerate.

2. Meanwhile, combine the Greek yogurt and lime juice . Add diced avocado , red onion , the corn kernels cooled and fresh mint . Mix well to obtain a creamy salsa.

3. Serve it fresh !
