1. Saute the corn kernels and the olive oil in a hot pan for 5 to 8 minutes. Add salt and pepper to taste. Refrigerate.
2. Meanwhile, combine the Greek yogurt and lime juice . Add diced avocado , red onion , the corn kernels cooled and fresh mint . Mix well to obtain a creamy salsa.
3. Serve it fresh !
