BLUEBERRY PROTEIN PANCAKES

Ingredients
- ¾ cup gluten free flour or buckwheat flour
- 3 eggs
- ¾ cup almond milk
- 1 ½ tbsp baking powder
- ¼ tbsp salt
- ½ cup plain greek yogourt
- 2 scoops of whey isolate protein
- 1 tsp cinnamon
- 1 cup frozen blueberries
- 2 tbsp coconut oil
Toppings
- low sugar maple syrup
- plain greek yogourt
- almond butter
- fresh fruit
Instructions
- In a bowl, combine flour, baking powder, salt, cinnamon and powdered protein.
- Gradually add eggs, yogurt and almond milk.
- Incorporate the blueberries and according to consistency, adjust with almond milk.
- Mix until smooth.
- In a non-stick skillet, melt a small portion of the coconut oil, then cook 1/12 of the preparation.
- Repeat step 5.
- Serve the pancakes with syrup and fresh fruit to choose from.
