LENTILS, FETA AND SPINACH SALAD

Preparation time: 5 minutes

Servings: 4 to 6

Ingredients

  • 2 cans (540 ml) of lentils, rinsed and draines
  • 1 diced english cucumber
  • 2 diced beefheart tomatos
  • 1/2 cup finely chopped red onion
  • 1/2 cup Kalamata olives, pitted and cut in 4
  • 1/2 cup cubed feta cheese
  • 1 handfull finely chopped parsley
  • 1 handfull chopped fresh spinach
  • 3 tbsp. balsamic vinegar
  • 2 tbsp. olive oil
  • Sea salt and freshly cracked black pepper to taste

Instructions

  1. In a big salad bowl, mix all ingredients together. Mix well and serve.
