Low carb bread

Preparation time: 15 minutes

Servings: 16 slices


  • 1/3 cup psyllium powder
  • ¼ cup coconut flour
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1/3 cup coconut milk (cream only)
  • 4 whole eggs
  • 2 egg whites
  • 2 tbsp. melted coconut oil
  • ½ tsp. apple cider vinegar
  • 2 tbsp. fast action bread yeast
  • 1/3 cup raisins
  • 1 ½ tsp. cinnamon
  • 1/3 cup sliced olives
  • 1 tbsp. dried Provence herbs


  1. Preheat oven to 350 ° F.On a baking sheet, spread parchment paper. Set aside.
  2. Combine whole eggs, egg whites, coconut milk and coconut oil with a hand mixer.
  3. In a second bowl, combine psyllium and coconut flour.Incorporate the flour mixture gradually to the first mixture. *
  4. Add cider vinegar, baking powder, yeast and salt.Form a ball and let rest for 2 minutes.
  5. Shape in form of a baguette, 2 inches by 13 inches and put in the oven for 1 hour 15 minutes.

* N.B. If you are making the cinnamon-raisin or olives version, add the ingredients for that version in Step 5.


Note: A ketogenic bread will not swell as much as a regular bread.
