Quinoa and vegetable meatloaf

Cooking time: 1 hour 15 minutes

Ingredients
- ½ cup minced onions
- 2.2 lb of lean ground meat: beef, pork or veal
- ¼ cup diced carrots
- ¼ cup diced celery
- ¼ to ½ cup cooked quinoa
- 3 tablespoon breadcrumbs
- 1 beaten egg
- 1 teaspoon canola oil
- ½ cup ketchup
- salt and pepper
- nutmeg, cinnamon, cardamom, ginger, and tumeric to taste
Instructions
- In a skillet, heat canola oil and cook onions, celery and carrots. Set aside to cool.
- In a bowl, mix meat, reserved cooked vegetables, cooked quinoa, breadcrumbs, egg and spices. Add salt and pepper and mix until throughly mixed.
- Preheat oven at 375°F.
- Place meatloaf mix in bread pan.
- Cook in oven 1 hour. 15 minutes before the end of cooking time, add ketchup on top of meatloaf and finish cooking.
- Let cool slightly before slicing and serving.
